No Yeast Cinnamon Roll Bites

Want cinnamon rolls but don’t want to wait for hours before you can enjoy them? That’s exactly what this recipe is for! A simpler and faster way to satisfy that cinnamon roll craving without spending too much time and effort.

These cinnamon roll bites are my version of a single serve cinnamon roll but instead of being one giant roll, it’s a bunch of small bite sized pieces of dough that are covered in butter and cinnamon sugar for the ultimate cinnamon roll fun!

The dough is made without yeast so you don’t have to wait for it to rest and rise! It yields 20 bite sized pieces, which is perfect for a single serve and the entire recipe takes about 20-25 minutes altogether!

Feel free to adjust the cinnamon-sugar ratio to your liking! Right before baking, you can also pour a brown sugar and butter mixture over the bites to make it more buttery and sweet!

Once baked, enjoy entirely on its own or add a little topping for more fun! The glaze adds a delicious touch of vanilla and sweetness, but more options include ice cream, chocolate syrup (if you like chocolate and cinnamon together), and cream cheese frosting!

No Yeast Cinnamon Roll Bites

Ingredients
 

For the dough:

  • 1 cup (130 g) all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup + 2 tsp (90 ml) milk or water (if using milk, microwave for a few seconds so that it's not cold)
  • 1/2 tsp vanilla

The coating

  • 1 tbsp (14 g) unsalted butter – melted and cooled to room temp
  • 3 tbsp granulated sugar
  • 1-2 tsp ground cinnamon

For the glaze:

  • 2 tbsp powdered sugar
  • 1/2-1 tsp milk
  • 1/4 tsp vanilla

Instructions
 

  • Preheat the oven to 375℉ (190℃) and line a loaf pan with parchment paper or lightly grease it with butter.
  • In a mixing bowl, add the flour, salt, and baking powder and whisk to combine.
  • Mix the milk and vanilla in a cup and then pour into the flour mixture. Combine and knead for a few minutes to form a soft and smooth dough ball, transfer to a lightly floured work surface and roll it to form a log (about 10 inches long).
  • Press down on it slightly to flatten it out to about 2 inches wide, and then cut it into 10 pieces. Then cut each piece in half for a total of 20 bite sized pieces.
  • Place the dough pieces in a bowl, pour the melted butter over them and gently toss so that each piece is coated in butter.
  • In a separate bowl, mix the cinnamon and sugar together and then pour it over the buttered pieces of dough. Toss again, making sure that every piece is covered in cinnamon sugar.
  • Transfer to the prepared loaf pan, make sure they lay flat and are not stacked on top of each other, and bake for 8- 10 minutes. (mine bake in 8 minutes but you can bake for a few more minutes if necessary. Just be careful not to over bake)
  • While that bakes, make the glaze by mixing together the powdered sugar, milk, and vanilla. Taste and adjust to your desired sweetness and consistency.
  • When the cinnamon roll bites are ready, let them cool for just a few minutes and then drizzle with the glaze. Enjoy warm!

    This recipe was a 10/10. At first, I thought it would be really dense and thought because there is no yeast but, its so light and airy. So if you’re looking for a quick recipe that’s good and doesn’t require yeast this is the one. 10/10 would recommend
