A good breakfast is the best way to brighten your morning and this meal does exactly that! The potatoes are golden and crispy on the outside and tender on the inside! The eggs are loaded with flavor and the cheddar cheese makes it more delicious and appetizing! Itās such a fun, tasty, and exciting combination of eggs and potatoes thatās bound to make it to your breakfast rotations!
A few tips to help you perfect this! Dice the potatoes into small cubes, making them fairly even. If theyāre too uneven, some of the potatoes will be burned and some will be undercooked. Secondly, to avoid burning the underside of the eggs, reduce the heat to low and cover to let it cook through after most of the egg has cooked. Donāt rush the process since it might overcook or burn the bottom of the eggs. Lastly, use freshly grated cheese to get that melty cheese pull!
This is a very versatile meal since there are so many variations you can make to this recipe using potatoes and eggs as the main components. Iāve shared the ingredients I used in the recipe card below but feel free to switch them up to suit your preferences. Some options include sautĆ©ing chopped onions and jalapeƱos with the potatoes as they cook. You can also add more seasonings, spices, herbs and more vegetables to the potatoes or eggs. Serve with avocados, chili oil, spicy mayo sauce, ketchup, or whatever you like and enjoy!

One-Pan Crispy Potatoes & Eggs
Ingredients
For the potatoes:
- 1 small/medium gold potato – diced
- 1 tsp black pepper
- 1/2 tsp garlic powder
- salt to taste
- a little bit of lemon juice
For the eggs:
- 3 eggs
- A little bit of chopped white onions, green onions, and serrano
- salt & black pepper to taste
- sprinkle of chili flakes
Other:
- freshly grated cheddar cheese
- oil for cooking
Instructions
- Heat oil in a pan and then add the diced potatoes, seasonings, and lemon juice. Mix to coat the potatoes and cook on medium heat, flipping and tossing frequently to ensure even browning and avoid burning.
- While those cook, crack the eggs into a bowl and add the salt, black pepper, chili flakes, and chopped vegetables. Whisk with a fork to mix everything together.
- Once the potatoes are cooked, do a little taste test to adjust for salt and seasonings if desired. Drizzle a little more oil into the pan if necessary, and pour in the eggs over the potatoes. Cook uncovered on medium-low heat until the eggs are mostly cooked and only a little bit remains uncooked on top. Then cover, reduce the heat to low, and cook until the eggs are done.
- After the eggs are cooked, top with freshly grated cheese and cover again for a few minutes to let the cheese melt. Then transfer to the serving plate and enjoy warm!
