Inspired by almond joy chocolates, these dates are stuffed with a coconut filling, topped with almonds and covered with chocolate all around! They’re such a fun and delicious way to enjoy dates and it’s like having a healthier version of the actual chocolate!

Not only are these inspired by almond joy chocolates, but they also came to mind after the popular snicker dates were introduced and became viral all across social media. Those were such a hit and quickly became a staple for many!
These coconut stuffed dates add onto the list of fun and healthier desserts/snacks! The dates lend delicious flavor and chewy texture and the almonds add nice taste and crunch! They taste just like the almond joy chocolates but are much better since they’re naturally sweetened, for the most part, and use very minimal ingredients.


What you need:
Here’s a list of everything you need for these almond joy dates. Measurements and instructions can be found on the recipe card.
- Dates – I used noor dates for this recipe but medjool dates work too
- Almonds – I wanted almonds in every bite so I chopped them into smaller pieces and spread it across the top of the coconut filling. You can do the same or keep the almonds whole and place one on the center of every date, exactly like it’s done with almond joy chocolate.
- Shredded coconut – You need 1/2 cup of unsweetened shredded coconut. Coconut chips or coconut flakes can be pulsed in a food processor until they become finely shredded.
- Coconut milk – used to make the coconut filling and lends extra coconut flavor
- Maple syrup – dds a delicious touch of flavor and sweetness to the coconut filing
- Chocolate – I used semi sweet chocolate chips but dark and milk chocolate will also do so use whatever you like
- Coconut oil – used to help with melting the chocolate chips

Coconut Stuffed Chocolate Covered Dates (Almond Joy Dates)
Ingredients
- 15-18 noor dates, pitted
- 1/2 cup shredded coconut
- 3 tbsp unsweetened coconut milk
- 1 tbsp maple syrup
- 15-18 almonds (you can either chop into small pieces or keep them whole)
- 1/2 cup chocolate chips of your choice (I used semi sweet)
- 2 tsp coconut oil
Instructions
- Line a tray, platter, or plate with parchment paper and place the dates on the parchment paper as you go.
- In a mixing bowl, combine the shredded coconut with coconut milk and maple syrup.
- Split the dates in half, but don’t cut all they way through, and remove the pits. Using a spoon or your fingers, stuff some of the coconut filling into the date and smoothen it out.
- Add a few chopped almonds on top and gently apply pressure with your fingers so that the almonds stick and stay put. You can also use one whole almond per date if you prefer (like the almond joy chocolates).
- Place the chocolate and coconut oil in a microwave safe bowl and microwave in 10-15 second increments, stirring in between, until the chocolate is fully melted.
- Dip each date into the melted chocolate. I recommend using a spoon to coat the dates until fully covered and using a fork to remove from the bowl once they’re done. Make sure to tap off any excess chocolate drips as you remove the dates and place them on the parchment paper as you finish.
- While the chocolate on the dates is still warm, sprinkle with some shredded coconut, chopped almonds, and/or flaky salt.
- Refrigerate until the chocolate is set and then enjoy!
- Keep leftovers in a sealed container in the refrigerator.
