No Bake Coconut Granola Bars

No bake coconut granola bars made from wholesome ingredients, no added sugar, lots of nuts, and bits of chocolate chips throughout! Theyā€™re crunchy and chewy with a delicious nutty coconut flavor!

I love making all sorts of granola at home! Theyā€™re so tasty and convenient to have around. No bake granola bars, baked granola bars, oatmeal bites, granola for yogurt, literally any kind of granola. Theyā€™re super easy to make, have tons of variations, and can be made in lots of different flavors! 

Itā€™s always a delight to have them ready for a healthy breakfast option, a quick snack, or anytime you want to much on something. Theyā€™re even great for kids to enjoy for snack time or in lunch boxes at school! Theyā€™re healthy, satisfying, and loved by everyone! 

Coconut Granola Bar Ingredients 

Since granola bars are very versatile, you can easily swap ingredients and customize them to your liking! Here are some of the ingredients I used with variations and substitutions you might enjoy!

Oats: Use either old fashioned rolled oats or quick oats. 

Nut butter: I used almond butter but you can sub with cashew or peanut butter. Use any kind of nut butter you enjoy that doesnā€™t have much texture to it. 

Sweetener: Honey or maple syrup work perfectly for these bars. Choose whichever you like. 

Coconut oil: This not only works as a binding agent, but also adds a deliciously subtle coconut flavor.

Nuts: Peanuts, almonds, cashews, and pecans are a few great options to add. 

Add ins: Shredded coconut and chocolate chips! The coconut shavings add chewy texture and delicious taste while the chocolate chips give a touch of sweetness and taste scrumptious with coconut and almond butter! I used semisweet chocolate chips but you can totally sub with milk or dark chocolate if you prefer.

Flavors: Vanilla for the extra flavor and salt to enhance it all.

Notes & Tips

Although this is a simple and straightforward recipe, here are a few tips to make the entire process easier.

The nut butter
Use a nut butter that has a smooth texture and good flavor. This is important since the nut butter adds flavor and is used as a binding agent for all the ingredients. Using something that is too thick and dry will be difficult to work with so opt for a butter that is runny and creamy. I used almond butter that had very little texture and it worked fine. Any nut butter of your choice will do. Also, leave it out for a bit so that it comes to room temperature. It’s easier to measure and mix when the nut butter is not cold.

The nuts
Nuts are an incredibly delicious and healthy addition to these granola bars. Chop the nuts into small pieces so that they distribute throughout the bars and you get nuts in every bite. Do this on a cutting board or use a food processor and pulse a few times until theyā€™re small enough to your liking. 

Roasting the nuts and oats
I roasted the nuts and oats on a stove top until they developed a golden-ish color and became aromatic. Roasting is a good option if you donā€™t want to eat raw nuts and oats but this is completely optional and can be skipped. You can do this in a pan over a stovetop on medium heat or bake them in an oven. Keep an eye on them so that they donā€™t burn.

Setting the granola bars
When youā€™re setting the contents of these granola bars, itā€™s very important to press down on them firmly and pack tightly. Use your hands or anything with a flat hard bottom (ex. bottom of a measuring cup). Make sure everything is stuck together, tightly packed, and in an even layer so that they set properly and you get equal sized bars after cutting.

Chill time 
It’s important to refrigerate the granola mix until it’s completely set or else they wonā€™t hold their shape when cutting into bars.

These granola bars are delightfully tasty and easy to make, especially since theyā€™re no bake. This is one of the many granola recipes that I enjoy and I hope to share a lot more!

Ingredients
  

  • 1 cup (250 g) almond butter see note
  • 1/3 cup (80 ml) maple syrup
  • 1/3 cup (80 ml) coconut oil
  • 1 tsp vanilla
  • pinch of salt
  • 1 & 3/4 cup (210 g) rolled oats
  • 1/2 cup (75 g) cashews – roughly chopped see note
  • 1/2 cup (75 g) almonds – roughly chopped
  • 2/3 cup (40 g) unsweetened shredded coconut
  • 1/2 cup (90g) semi sweet chocolate chips

Instructions
 

  • Line a 9 x 9 inch square baking dish with parchment paper and set it aside.
  • In a bowl, add the rolled oats, almonds, cashews, shredded coconut, and chocolate chips. Mix to combine.
    Optional – If you prefer to roast the oats and nuts, heat a pan over medium-high heat and toast the oats and nuts until they become slightly golden and aromatic. Stir frequently to avoid burning. Let them cool completely and then mix in the shredded coconut and chocolate chips.
  • In a separate bowl, combine the almond butter, maple syrup or honey, vanilla, coconut oil, and a pinch of salt.
  • Pour the liquid ingredients into the dry ingredients and mix together until everything is combined.
  • Transfer the mixture to the prepared baking dish and spread it evenly throughout the dish. Use the bottom of a flat surface (ex. bottom of a measuring cup or spatula) to press down on the mixture to pack firmly and tightly.
  • Cover and place it in the refrigerator for a few hours or overnight. Once they're completely firm and set, lift the parchment paper to remove the mixture from the dish and cut the granola into 12 bars.
  • Wrap each bar individually in parchment paper or plastic wrap and keep refrigerated.

Notes

-Leave the almond butter and maple syrup out for a bit so that they come to room temperature. This will make it easier to measure and mix everything together.
-To quickly chop the nuts, add them to a food processor and pulse a few times to chop into small pieces.
