Cheesy Garlic Breads

Garlic bread buns made with fresh homemade bread, covered with a delectable cheesy garlic spread, and topped with lots of shredded cheese! The perfect appetizers or sides to have anytime!

This garlic bread isnā€™t just any regular bread with a garlic butter spread (though thatā€™s still great and appetizing); itā€™s freshly made warm, soft, and fluffy bread that bakes to perfection and is full of a rich cheesy garlic flavor!

The dough takes only 1 rise and is enhanced with garlic powder to make it more tasty! Not only that, this recipe uses a combination of cream cheese, mozzarella cheese, and cheddar cheese to make it delightfully cheesy!

The Dough

The dough consists of basic bread ingredients such as flour, salt, water, yeast, and sugar. To make it taste even better, I also mix in garlic powder with the dry ingredients. This adds more depth and an extra kick of garlic flavor.

As you work with the dough, remember to keep it covered at all times to avoid drying it out. The first rise is only about 45 minutes, or until the dough doubles in size. To expedite the process, set the dough to rest in a warm area.

Once it has risen, gently punch it down and divide into 12 equal pieces, rolling each into a ball. Cover at let them rest again for 5-10 minutes. This short period of rest allows the gluten in the dough to relax, making it easier to roll out. If you find that the dough is not holding its shape as you roll it, simply let it rest for a few more minutes and then try again.

The Garlic Spread

The garlic spread is made by combing cream cheese, roasted garlic, and chopped parsley. The tanginess from the cream cheese pairs perfectly with the strong nutty taste of the roasted garlic to create a delicious creamy spread!

For the garlic, I prefer to mince it and roast on a stove-top instead of baking it in the oven. This helps to speed up the process and saves SOO much time and oil, literally cutting the cooking time down by hours! Simply saute the garlic in a pan using a few tbsp of oil. Takes just a few minutes instead of an hour and the garlic is nicely fragrant and golden brown. Drain out the oil and combine it with cream cheese and parsley and then the garlic spread is ready!

These cheesy garlic breads are an exciting variation to add to your list of garlic bread rotations! The bread puffs up beautifully as it bakes and the garlic spread tastes absolutely amazing! Ingredients
 

The dough:

  • 1 cup (240 ml) water
  • 1 tbsp (10 g) white sugar
  • 2 Ā¼ tsp active dry yeast (1 envelope)
  • 3 cups (390 g) all purpose flour
  • 1.5 tsp salt
  • 1.5 tsp garlic powder

The spread:

  • 5 oz (140 g) cream cheese
  • 1/3 cup (50-55 g) minced garlic
  • 1 -2 tbsp chopped parsley
  • 1 serrano or jalapeno, finely chopped (optional)
  • 3-4 tbsp oil

To assemble:

  • 3/4 cup (75 g) shredded mozzarella cheese
  • 3/4 cup (75 g) shredded cheddar cheese
  • chopped parsley to garnish

Instructions
 

The Dough:

  • Activate the yeast by mixing it together the warm water and sugar. Let it rest for about 5 minutes, until the yeast proofs.
  • In a mixing bowl, whisk together the flour, salt, and garlic powder.
  • When the yeast is ready, pour it into the flour mixture and combine everything together to form a dough ball.
  • Transfer on a lightly floured surface and knead for 7-10 minutes until smooth. The dough is ready when you gently press down on it with a finger and it bounces back.
  • Place in a lightly oiled bowl, tightly cover with plastic wrap, and let it rest for at least 30-45 minutes, or until it doubles in size. While the dough is resting, prepare the spread.

The Garlic Spread:

  • Heat a few tbsp of oil in a pan over medium heat and add the minced garlic. SautĆ© on medium-low for a few minutes, stirring frequently, until it becomes fragrant and develops a golden color.
  • Let it cool for a few minutes then strain and transfer to a bowl with cream cheese, parsley, and serrano or jalapeno (if using). Mix everything together and set aside until ready to use.

Assemble & Bake:

  • When the bread is ready, gently punch it down, transfer to a lightly floured work surface, and divide into 12 equal pieces. Roll each piece into a ball, cover, and let it rest for 10 minutes.
  • In the mean time, preheat the oven to 400ā„‰ (205ā„ƒ) and line a baking sheet with parchment paper.
  • On a lightly floured surface, evenly roll out each dough ball to about 1/4 inch thick, placing them on the baking sheet as you go.
  • Spread the garlic mixture over each piece, leaving a little room around the edges and top with shredded cheddar and mozzarella cheese.
  • Bake for 8-10 minutes and then broil for a few minutes to get the cheese golden brown and bubbly. Keep an eye on it as it broils to avoid burning.
  • Remove from the oven, garnish with chopped parsley, and enjoy!
