Classic Banana Bread

The only recipe you need to make a perfectly sweetened and moist banana bread with incredible flavor!

This banana bread loaf is fluffy and moist on the inside and with a soft crumb on the outside! It uses the perfect amount of bananas mixed with white and brown sugars to create the ideal banana bread flavor without being overwhelmingly sweet.

Tips before getting started:

Measurements
It’s important to measure ingredients correctly. Grams are the most accurate form of measurement so use a kitchen scale if you have one. If not, then remember to measure the flour using the spoon and level method.

Sweetness
The riper the banana, the more flavor and sweetness it’ll contribute to the bread. So you want to make sure to use very ripe bananas. Also, try not to cut back on the sugars since they add lots of flavor! Don’t worry, this banana bread is not “too sweet.”

Temperature
You want to make sure the cold ingredients are bought to room temperature before getting started. To quickly bring the egg to room temperature, place it in a bowl of warm water for about 10-15 minutes.

Process
Be careful not to over-mix when combining the dry ingredients with the wet ingredients since that will ruin the texture of the bread, making it tough and chewy. Mix only until just combined.

Toppings & Servings

You can add nuts, like pecans or walnuts, to the batter before baking for extra flavor and texture throughout the bread. Shredded coconut and chocolate chips are also some great options!

To serve, top it off with honey, maple syrup, or your favorite butter! Powdered sugar, more nuts and more banana slices are also some good serving options!

Moist Banana Bread

Ingredients
  

  • 2 cups all purpose flour (260 g)
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup (228 g) mashed bananas (about 3 large ripe bananas)
  • 1 egg – room temp
  • 1/4 cup (65 g) plain yogurt – room temp
  • 1/3 cup (80 ml) oil
  • 1.5 tsp vanilla
  • 1/2 cup (100 g) white sugar
  • 1/3 cup (70 g) brown sugar, packed
  • 3/4 cup (85 g) chopped walnuts or pecans optional

Instructions
 

  • Preheat oven to 350℉ (176℃), grease a 9 x 5 loaf pan with nonstick cooking spray, and set it aside.
  • In a bowl, whisk together the flour, salt, cinnamon, and baking soda.
  • In a separate bowl, add the mashed bananas, the egg, oil, yogurt, vanilla, white sugar, and brown sugar. Mix until combined.
  • Now add the flour mixture into the wet batter and gently fold until no visible streaks of flour remain. Be careful not to over mix.
  • Gently fold in the nuts, if using. Optionally, leave some nuts to add on top of the bread loaf before baking.
  • Pour the batter into the prepared loaf pan, top with some more nuts, if desired, and bake for 50 minutes, until toothpick inserted in the center comes out clean with just a few moist crumbs. Start checking after 50 minutes and continue checking after every few minutes until it's done.
  • When it's done, remove from the oven and let it cool in the pan for about 10 minutes. Once the pan is cool to touch, remove the banana bread and place it on a wire rack to cool completely.
  • Then slice, serve, and enjoy!
